In 2012, Matthieu L’Hotelier began producing wine in a shed, later joined by partner Chloélie Cholot-Louis in 2020. They upgraded to a 17th-century farm near Montrelais in 2022. Their vineyard, in eastern Muscadet close to Anjou, yields wines reminiscent of Chenin. They cultivate old vines and plant new ones, using only plant-based mixtures without chemicals. In the cellar, Matthieu employs a careful, hands-off approach, pressing grapes slowly and fermenting in fiberglass tanks. This meticulous method results in precise wines with notable minerality and freshness, reflecting their commitment to minimal interference and respect for nature.
