For the Glouglou cuvée, he does a traditional Beaujolais maceration of 8-10 days in whole bunches followed by short aging (one winter) in vessels. It is bottled in the spring.
Very juicy on the sour side, perfect for apéro with ham and cheese or raclette. It’s free as a bird, it should be drunk quickly!
